Great Smoked Meal !
Smoking ducks if they are whole is a long process after preparing it takes about 6 to 8 hours . Smoking times vary but smoke until no blood when it is sliced into. It is best served cold with the skin removed and just eat the breast and legs. At least that’s how we like it.
Smaller pieces you have to be careful with there is little to no fat on a wild duck so to smoke it you can wrap it in bacon or brine it. We have done both. Your smoking time is much shorter with pieces around 3 hours.
Either way that you decide it is a wonderful meal, nothing like cooking what you harvest.
